Dessert for Breakfast!

I was so excited to have all these ingredients on hand in my apartment! If it is one thing I loathe…it is craving something in the morning and having to go to the store for the one or two key ingredients that you are missing. So I was blessed this morning! It was more than delicious and it really isn’t that complicated. But I was cooking for one….so you may want to increase your volume. Bon Appetit!

Fresh Cherry Sauce

1 Cup of Dark Cherries (pitted)
½ Cup Water
1 Teaspoon of Lemon Juice
¼ Cup Granulated Sugar
½ Tablespoon of Cornstarch
¼ Teaspoon Vanilla or Almond Extract

Combine all ingredients together in a saucepan over medium/low heat for about 8ish minutes.

Spiced Crepes

½ Cup Flour
½ Tablespoon Granulated Sugar
¼ Teaspoon Ground Nutmeg and Cinnamon
Dash of Salt
½ Cup Milk
2 Eggs
¼ Teaspoon Almond or Vanilla Extract
1 Teaspoon Vegetable Oil

Mix all ingredients together. Spray a frying pan with non-stick cooking spray and set on medium/low heat. Pour a thin amount of batter into the pan and tilt the pan until the batter evenly covers the bottom of the skillet. Cook each side of the crepe for about 30 seconds or until very lightly brown.

Whipped Cream

¼ Cup Heavy Cream, chilled
¼ Cup Sour Cream
¼ Cup Powdered Sugar
¼ Teaspoon Vanilla Extract

Combine ingredients in a bowl and whip it…whip it good.
